I think this is a good way to come up with some new ideas, and we can share recipes if anyone sees something they want to learn how to make...


l'll start:
For lunch, spagetti and meatballs and for supper, cheese casserole.

(Not today, it's still morning here, but the last time I cooked, I think: )
Turkey nuggets, rice, orzo, corn, vegetable (=whatever we had in the freezer at that time) mix.

Thank you GT! This section really needs a boost and I've been trying to think of how to liven it up myself.
Last time I cooked, Monday, I threw chopped onions, celery, garlic, a can of black beans, a spoonful of tomato paste, a pound of ground turkey, 1/4 cup barley and cumin, chicken soup powder and chili powder in the crockpot, and we came home to turkey chili, with cilantro and parve sour cream on top.
It was so good (and easy and cheap) that I want to make it again for shabbes lunch. with cornbread, and watermelon sorbet for dessert!

Sunday I made fishsticks and macaroni and cheese.
Monday I made sauteed shoulder steak cut in strips, with garlic cloves and broccoli, and rice flavored with turmeric on the side.
Last night I made tuna noodle casserole.
Tonight is salmon and baked ziti.

Yum, haven't had that in forever.

What is cheese casserole? And/or how do you make it?

Last night, I had burritos for dinner (and some leftover fishsticks from lunch).

Mix sugar, cottage and cream cheese into a pack of pasta, add a bit of melted butter and cinnamon and dump in the oven. smile.gif Haven't tasted it yet but it smells delic.

Probably salad with crackers for lunch. Or I'll go grab a pita. Last night was Fettuccine Alfredo, night before was Gazpacho. Tonight we don't have to cook, which is good because it's too hot.

We made that for a party Sunday.

Fish baked on top of sliced onion and crushed garlic, topped with spices, zucchini and carrots and sprinkled with a few tablespoons of wine, to be served with brown rice and maybe some more veges.

OK, so far, we're up to...macaroni and cheese. I am just not into making big meals...maybe for tomorrow?

I just marinate some strips of chicken in a ziploc bag with lemon juice, olive oil, garlic, salt, pepper, and oregano, sage, etc. While that was marinating, I sauteed an onion cut into rings, and when the onions were soft, I took out the chicken and added it to the frying pan. I served the chicken on sub rolls that had a bit of mayo smeared on them.

As for the quinua, I just followed the directions on the box, and added chicken soup mix to the water to give it flavor.

You aint kidding... sad.gif probably about an hour to get them all done. Truth is its the only thing I actually got done today so it's not that bad.

My husband "needs" homemade meals... (which is actually quite good for me since it forces me to get off my bottom and learn how to cook)
What do you usually have for lunch and supper then btw?

My kitchen's not so hot (beauty of central AC).
I like cooking, even if it is hot, I don't being in the kitchen so much.

As much as I love eating out, I try not to go out so often b/c then you're automatically consuming more calories than if you make it yourself (assuming one is trying to keep things healthy).

Usually I eat lunch at work, and my very capable DH fends for himself for lunch. Dinner is either leftovers or a meal I cook. This week happens to be a bit of an exception because I am off from work, which you would think gives me more time, but instead means I'm busier outside doing other things and don't have my regular routine in place. Then, we spent a couple of days away from home, and I spent another night away for dinner, so no cooking needed then. Another night, I pulled leftover takeout out of the fridge and I ate that, and he made himself chicken nuggets, which was enough for dinner. It's just so excruciatingly hot that I have so little motivation to get into that kitchen. But tonight and tomorrow we'll be cooking -- let's see if I remember where the pots are...

You're lucky about your kitchen. You know I don't mind cooking, once I'm already in the kitchen and busy. It's just thinking about the effort and heat that's going to go into it before I even start that makes it a little overwhelming. Usually, once I'm busy in the kitchen, it's somewhat enjoyable. And nice to serve to people who are appreciate. But not the dishwashing, for sure not.

Yup, you and BF are right about things being more expensive and less healthy from takeout. Too bad it's just so convenient and good (IMO, I know not everyone likes takeout)

When I worked I never cooked either. Wasn't home for lunch and by the time I got home I was too tired to make supper, so DH usually did the cooking. If you are busy with other stuff there is nothing to feel guilty about.. I totally understand the not being motivated to cook though, I'm very lazy so I try getting out of it whenver possible, but I also enjoy it alot once I get started.

I agree, and I do like take-out, I'm just cheap. (And I"m supposed to be on a diet, so I guess I do care about the calories also)

I love take-out! I definitely enjoy eating fast food. . . however, it adds up ($$$), and I know that in the past, when I ate out all the time, I put on so much weight - and now that the extra weight is gone, I don't want to help it come back!!!!

To get back on topic:
I just put up a Spicy Sweet Potato-Carrot soup and I think I'll make grilled cheese on whole wheat bread with a couple different cheeses inside.

Tonight's supper was supposed to be Omlette Bar, but I got lazy so it was a (defrosted/reheated) Beef/Barley/Vegetable soup & pita.

I'm on a mission to cure my husband of his psychosomatic lactose intolerance.

Dinner:

Zucchini and Okra simmered in tomato sauce
Suffed shells (with lots of spinach in the ricotta)
wattamelon

future plans:
Penne vodka, but I forgot to buy cream this week.
I also need to buy sweet wafers of some type to make cannolis, I already have the ing. for the filling.
Make your own pizza (or more like it: tell your wife what toppings you like, she'll make your pizza rolleyes.gif )

Last night was fried flounder, israeli salad and rice. I bought a pack of flounder accidentally instead of tilapia; I didn't really like the taste of flounder, but he did.

Shabbos dinner will be london broil, brussels sprouts, Israeli couscous, homemade olive dip, garlic dip, and tomato dip.

Sweet potato soup:
1 onion
1 shallot (optional)
2 sweet potatoes
2 carrots
3 cups chicken stock (I use water mixed with consoumme)
1 cup milk
ginger powder, nutmeg, cinnamon, red pepper, salt, pepper
worcherstershire sauce

Sautee the onion until transluscent. Add all the spices while it sautees.
Add the chicken stock and a couple tablespoons of worchestershire sauce, bring it to a boil and add the carrots and sweet potato. Let it simmer for about an hour or until the carrots and potatoes are soft. Add the milk, let simmer a little while longer.
Put into a blender or use an immersion blender and blend until smooth.

I like to serve it w/ some mozzarella cheese mixed in.

I just made this up today - I cook to taste so I didn't measure anything, so these measurements are estimates.

Tonight's dinner was:
Big leafy salad with tomatoes, cucumbers, red onion, craisins, croutons and a creamy dressing
Fresh corn on the cob (I love pulling off those ears)
Squash Sautee (hoping to use most of it for Shabbos dinner)
and Chicken with rice, onions and mushrooms.
Despite the heat, it felt good to be in the kitchen once again, I have to admit. I just went into the air conditioned room every few minutes. And it helps to have company for dinner biggrin.gif.

I didn't make it tonight, but I will tmw for shabbos. Fresh. I need to look up how to prepare them exactly, it's a dish I had at someone else's and I really liked it. Apparently the key to making okra that isn't slimy is to cook it in the tomato sauce (or deep fry...!!!)
