I'm clueless! urgent!

baked chicken? mashed potatoes/rice/buckwheat as a side dish, veggies salad?

any other requirements besides chicken, easy and urgent?

A simple one is to coat chicken with mayo and then stick on potato flakes....works with bone or without but if you give me more specifics, I can help you out a bit more.

nope, anything will do! pref on the bone as thats easiest

mix together ketchup, duck sauce, and red pepper flakes to taste. (or use italian dressing)

slice an onion and layer on the bottom of a pan.
cut a few potatoes into small chunks and put on top of the onion.
layes chicken (on the bone) on top, smother with duck sauce mixture.
bake on 350 covered for an hour, uncover and bake another 30/40 minutes

i want to make something like this with rice... anyone know how much rice/water/etc needds to go on the bottom of the pan

or for the chicke sauce (skin has to be on)- sprinkle with honey, garlic powder, orange or apple juice, paprika. didn't taste it, but my guests loved it. oh, onions have to be on the bottom, too

I made a tagine-style chicken tonight. Very easy and it was delicious.

Made this and it was delicious - had no onions (read 'burnt them trying to fry them for another dish'). I actually cooked it first with some water added on the stove top and the took the lid off and popped it in the oven for half an hour. Boiled up some egg noodles, mixed them with the 'chicken juice' opened a can of corn and hey presto! the first meal (other than eggs and french toast and pancakes when he's lucky) that I cooked for my husband!!!!!!!!! (he loved it)

It's funny cause I just made a recipe almost exactly like this for Shabbos. I got the recipie out of Real Simple. The only difference is it used apricote preserves instead of duck sauce and I also added a little chili powder for a little more of a kick. I hope it turns out well!!!

Turn broiler on. Lightly salt chicken. Insert under broiler. Turn after 10-15 minutes, remove after another 7 minutes. Eat juicy chicken.

I do the same with beef (except in less time, and a different seasoning, of course).

Anyway, on to chicken:

Boil chicken (boneless is best but you can debone after boiling) with desired seasonings. Measure the broth after you remove the chicken. Add half the amount of rice (re: two cups of broth = one cup of rice) that you desire. Mix the rice slowly in the broth until it returns to a boil. Add the chicken (deboned and cubed), reduce heat, and cover for 15-20 min. Whalah.

I just put about 1/2 cup rice, and water til the pan will overflow (I use a fairly shallow pan, so probably 1 to 2 cups of water, starting with less and adding if I know it will come out dry) then I stick chicken and it's "spice" or "Sauce" on top.

However, for rice for company I would suggest making salami rice:
Get a fairly large chunk of salami and dice it up. (i.e. when you buy it, DON"t have butcher slice it)
Saute an onion and mushrooms (1 small can, about)
Add salami and continue to saute for a bit longer.
In 9*13 pan, put 2-1/2 cups of rice, 5 cups water, a couple tbsp. of mushroom soup powder, and the saute mixture above.
Cover and bake at 350 for 1 hour.

Also, depending on how much you like salami, depends on how much you would put in - we like the meaty flavor so I tend to put in quite a bit.

i know i would hate someone who said this to me, but i don't know (hey, i didn't hate my friend who told me this recipe smile.gif ) put onion rings in a pan, put 3 chicken pulkas with skin on on top of onions, drizzled them with honey (kind of made an X), pour a little bit of juice everywhere on the chicken, and spices. sorry, can't give you the more exact ones.
