I'm getting bored of my rice and potato kugel. What are some other things that you guys serve or have seen served with the chicken on Shabbos?

DH doesn't like orzo. Maybe I'll make it anyway.

yes, the bows. or, kasha varnichkes.
sauteed veggies - peppers, eggplant, squash, carrots. no recipe, sorry. or maybe even grilled veggies?
stuffed squash boats - with rice (i know, again, but it's not the main ingredient, just a part of filling). they look very different and fancy.
btw, do you try different types of rice - wild rice, add spices to make it yellow?

I've never had quinoa not on Pesach. I actually thought it tasted like nothing.

I don't peel them. Just drizzle some olive oil in the pan, cut the potatoes into wedges or slices and sprinkle them with creole seasoning.

Stewed Peppers- Slice onion, saute in olive oil until translucent but not browned, slice peppers (I use different colors) and add to pan, stir for a few minutes and add salt and pepper, and basil or parsley if wanted, then cover and let simmer until the juices boil out. You get lots of flavor for very little work. Add a little water if wanted.
Baked potato cubes- peel and cube potatoes, drizzle olive oil and salt and rosemary.
Stuffed pasta shells- cook the shells beforehand and store in fridge, add stuffing right before serving and serve with sauce kept warm on the plata.

Sauteed veggies kept at room temperature. Or stuff them with ground meat, then pour hot tomato sauce over them before serving.

My current favoritest side is one I had by Yodaat...it's sauteed, finely chopped onions, peppers, celery, carrot, zucchini tossed with pasta (penne or ziti) and a grated tomato. It's responsible for my falling off the low-carb wagon...

But the other recipe doesn't have onions, and also you cook the sauce until it's thick, unlike this sauce, which is just mixed in a bowl. If it's not too much of a hassle, can you (or someone else) please post the other one?

It's a regular tomato, which you then grate. I choose large, firm-fleshed tomatoes and don't find it to be messy at all. I suppose one could use pureed tomato also, but I like the fresh-tomato flavor.

Here's the recipe (I posted it about a year ago, and did a search):
6 tablespoons margarine
1/2 cup flour
2 large onions chopped
1/2 cup mayo
1/2 teaspoon salt
28 ounces chicken stock
9-10 large idaho potatoes, peeled and sliced into 1/4 inch slices
freshly ground pepper, paprika
Preaheat oven to 350. Spray a 9x13" baking dish with cooking spray.
In a large pot, melt the margarine over medium-high heat. Add the flour, stirring constantly. Add the onions, mayo, salt, and chicken stock. Stir until smooth. cook until the sauce thickens.
With a ladle, place a layer of the sauce into the bottom of the prepared pan. Spread a layer of sauce. Repeat, alternating with layers of potatoes and sauce. There should be a total of three sauce layers and two potato payers, with sauce on top.
Sprinkle the top layer with pepper and paprika. Bake uncovered for 1 1/2 hours or until golden brown.

yep, that's the recipe. the only thing i change is the number of potatoes - for that recipe i use 3-5 potatoes. (and i cheat with the chicken stock - shhhh)

you dice all the veggies or grate carrots and zuchini? do you add grated tomato to sauteing veggies or to the finished dish?

I dice everything except the carrots, which i grate (though you could definitely dice them too - I'm just not a fan of carrot chunks). I add the tomato in the last minute or two of cooking, before tossing with the pasta. If you cook it much longer than that, you'll lose your fresh-tomato flavor.

I made a really easy and yummy potato dish last week - cut up 3 different types of potatoes; red, yellow and brown. Did NOT peel them first. Mixed it with olive oil and sprinkles spices on top (salt, pepper and garlic, but you can do what you want). Put them in a pan, bake for 350 for about an hour and a half. Presto. Yummy, easy side dish. Way easier than potato kugel!

We do this with onion soup mix. It's easier than potato kugel and some people like it more!
