I have a yummy cop-out recipe:
buy a chocolate brownie cake mix, add cranberies and coconut shreds to the mix, and once it's baked, add chocolate frosting- if you'd like.
I've had brownie mix w/ cranberies. Made quickly and still tasty!

check out this - they have desserts from cranberries with chocolate, maybe you can stick in coconut as well.
