I am typically a purist and only use russet baking potatoes for latkes however I forgot potatos in my last shopping trip and I have red potatos on the counter already. Has anyone ever attempted latkes with red potatoes? Do they come out differently? Do I have to peel them (often with red potatoes you don't have to peel them)?

How about sweet potatoe latkes?

There is no skin, it is paper thin, and there is no difference between the white ones and the red ones..

After Shmita, Bli neder, I am going to smuggle a whole buttload of them in and plant them....

My hunch is that the texture of red potatoes seems wrong for latkes. I have made sweet potato "latkes" they were really potato coins with breadcrumbs and only tasted eh.
I'd wait it out until you can go shopping again. I made latkes last night and they were so good they were award wining worthy.

You need starchy potatoes for latkes because ti's the starch that holds them together. Red potatoes are waxy, and won't work as well.
