Almost any item can be frozen succesfully. The key is knowing at which point to freeze it.
1) Challah. Freeze after first rising and shaped. When want to back, take out of freezer, let defrost and bake on low tmp (250 or so) for a long time
2) Potato kugel - cook until about 3/4 of the way finished and then freeze. When ready to use, put straight in a hot oven and heat until finished
3) Carrot kugel - freeze either completely raw OR completely cooked
4) Noodle Kugel - completely cooked
5) cranberry kugel - I have done as #3 but there is a DEFINITE difference in texture between fresh/frozen, although it still gets eaten just as fast in my house.
6) lasagna - raw

All freezer items should be labeled with item name/ whether it's raw/cooked, what date it is from.

If you have questions about certain items, let me know and I'll tell you if I've done it and the results. I use my freezer A LOT (we have a spare one which helps)

Challah never tastes the same once it's frozen.

It does if you follow my technique.
Freeze it shaped, but not baked.
Take out in morning and put on counter when you wake up. About 5-6 hours later, egg and stick in a low oven on highest rack. It will probably take a good hour or so to cook, but it will be delish and just as good.

(I used to say as you because the above was the ONLY method I hadn't tried and no other method was succesfull previously. Try it and report back to me, please)
