I hardly eat chicken, but I'm in the mood for it for Shabbos. I know people make chicken with apricot jam, orange juice, and saw BF mention with coke. Recipes, anyone? (but it has to be easy and quick)

Last week I mixed orange-pineapple juice with honey and crushed red pepper flakes and poured it over the chicken. In the words of my brother, it was "very, very good".
Duck sauce.
Apricot jelly, ketchup, and mayo boiled and poured over chicken (they actually make this in Neve Yerushalayim)

I think so. (Same thing as Russian dressing with apricot jelly)

would you believe i have no idea how ot make it?
thanks, will try the jam/mayo/ketchup one tonight. but i'm still curious to hear that coke one...

IIRC, coke chicken consists of Coke, ketchup, little bit of mustard, and vinegar.

oh, cool, you are here, BF. can you tell me the proportions of coke/ketchup and vinegar (for, say, 4 leg quarters)?

I really don't know the measurements. . . I used to have the recipe written down, but not anymore. I just guess.

hm, maybe approximately? if you were to guess it, for 1 can of coke, how much ketchup and vinegar? see, i never tasted it, so don't even know how it's supposed to taste/look.

You could also try apricot jam + onion soup mix + onion powder + garlic powder + salt + paprika.
Sprinkle chicken with spices, bake covered 1.5 hours, combine onion soup mix and jam, pour over chicken, bake .5 more hours uncovered.

hm, sounds interesting. thanks. my friend also told me apricot jam+honey+white wine (or apple juice cause i don't have wine)
