recipe calls for canned salmon but the canned salmon here has the bones and everything in the can.
how can i substitute fresh salmon for the canned so that i know what's going into the dish?
cook it first? boil? leaved raw and go about recipe as usual? is it the same amounts?

If you are careful you can get all the bones out. They are all connected to the spine and if you put a knife under it and lift it out gently you can get almost all the bones out. I do it all the time.

I am not eating anything that involves canned salmon. Just so you know.

Me neither.
We once bought a fancy kind of canned salmon that had all the bones taken out, so that was edible, but I don't know remember what company it was.

I'm not a fan of canned salmon, but can't you remove some of the major bones? I thought they just sliced the salmon and threw it in, and the bones were all still connected to the spine. If not, will you really notice the bones? I've had salmon patties from canned salmon and never noticed any bones.
