Full Version: Mashed Potato Recipe?

Does anyone have a recipe for mashed potatoes that is pareve but TASTES milchig? I'm having non-frum guests over tonight and would like them to say "this is GOOD", not "this is good....for kosher food". Something as close to the cream-and-butter rich 'taters that people really love would be ideal (as one person is OTD and biased towards pareve 'taters already).

If fat and calories aren't an issue, add some mayo and margarine to the mashed potatoes. Personally, I don't see the problem with just mashing the potato and adding some spices and a bit of margarine.

i could see margarine to make it fluffy, but mayo?

It gives it a dairy-like flavor.

I'm still experimenting to try to find really good nondairy mashed potatoes, but I recommend roasted garlic (bake it in the skins with a little olive oil, let it cool, then squeeze it out of the skins). This gives it a richer mouthfeel. You can use it for milchig mashed potatoes too and cut down on the butter.

A LITTLE Rich Whip also helps (don't overdo it) and chicken broth gives it good flavour that isn't fake-dairy.

Thanks BF! These were the best pareve mashed potatoes I've ever had, and my guest kept insisting they HAD to be milchig! I used reduced fat mayo to make it a little easier on the calories, but it was GREAT!
