The first day of Pesach. During lunch. I eat a big bowl of it and then the thought of bowl #2 scares me until the next year.

i know, i also can't imagine the ready food just from teh recipe, but those do sound good (judging from the first sentences, didn't open any of them). how could roasted cauliflower and garlic taste bad? biggrin.gif

You could probably just use a broccoli recipe and stick cauliflowr in instead.
KBD Kids has a broccoli-cauliflower soup recipe, if you want me to type it, let me know.

small onion
1 clove garlic
1 shallot
1 small potato
4 T marg
6 oz (aprx 4 cus) each broccoli and cauliflower florets
4 cups veg/chicken broth
1/2 cup light cream/soymilk

chop onion and garlic, slice shallot into thin rings
peel potato, cut into chunks
put marg into pot (med heat)
add onion, garlic, shallot. cook for 6 min
add potato, broccoli, and cauliflower
add broth
cover and cook about 30 min (until veggies are soft)
turn off heat, add soymilk, blend with immersion blender
add salt to taste

(Hmm... sounds good- I'll take Gabbe's portion, please.)

saute onions (2)
add 8 cups water
4 potatoes (chopped)
4carrots (chopped)
4 zuccini (chopped)
4 tsp salt
4 tsp chicken soup powder
simmer for 45-60 minutes.
Puree if wanted, this way kids don't see veggies.

This is very good (I've made it twice)

1 onion, quartered - I diced and sauteed the onion
6 cups water
1/2 cup dry red wine - I used Marsala wine
1/4 cup balsamic vinegar
1 (14 1/2 ounce) can chopped tomatoes, chopped or 2 tomatoes, chopped
1 (29 ounce) can white beans, like canelini
1 (15 ounce) can red kidney beans, not drained
30 baby carrots - I used shredded carrots
10 baby zucchini (optional) - didn't put any in
2 teaspoons vegetable soup mix - used chicken soup powder
1-2 frozen crushed garlic clove, minced or 2 garlic cloves, minced
1 teaspoon dried oregano
1 tablespoon salt
1/2 teaspoon course black pepper

I also add barley


Place all ingredients in 6 quart pot.
Cover and bring to boil.
Reduce to simmer and cook for over an hour +
Ladle into bowls and serve!
