As is well known, the verses Shemot 14:19-21 contain exactly all letters of 72 three-letter divine names. All letters of 72 names and all letters of the Hebrew alphabet...besides 'gimel'. Why? Has the letter 'gimel' some special meaning?

It stands for געפילטא.

Perhaps gimmel represents the Trinity, which Judaism prudently leaves out of the 72 names of God.

Maybe it's because at Yetzias Mitzrayim the Jews burned their bridges with Egypt.
Or maybe because they didn't take out any camels.

As far as I know, the kabbalistic meaning of 'gimel' is 'running man'. But I don't understand why such meaning isn't suitable for names. Maybe is the other reason for it? For instance, I myself subconsciously associate 'gimel' with the word 'gulgalta'...

This is alluded to by the leg of the letter gimel which expresses the running of the rich man to bestow good upon the poor man. Running, more than any other physical act, expresses the power of will and freedom of choice.

I have no idea what the answer is but maybe gime"l is inherent in the verses since it's 72 triads of letters among three verses so gime"l is the elephant in the room.

Also note that gime'l is one of the most infrequent letters in chumash so statistically I guess it would make sense that any random selection of verses would be less likely to have a gimme"l than most other letters.

You gave me an idea. Maybe one way or another gimel is hidden in these verses. Few times I observed that the whole verse of the Tanakh may be equal to some one letter in its kabbalistic meaning.

By the way, the verse Shemot 14:19 contains words '...went behind them...' what is little similar to such meaning of gimel as '...a rich man running after a poor man...'.
