Looking for a matbucha recipe. Anyone?

(No K-Rebbe, PM, etc- I don't want to go to the store and buy ready made.)

what is matbucha? I never heard of that.

Matbucha

7 cut up tomatoes
1 diced green pepper
4 cloves garlic, minced - about 2 T
2 T paprika
3-5 T oilive oil
1/2 t turmeric - or more, to taste
few grinds of fresh black pepper
pinch of salt

Heat oil and then add all ingredients and mix.

Cook on high flame until it boils, then lower the flame to lowest level and let cook for at least 2 hours to thicken. Stir occasionally.

Eat cold. Mmmmmmmmmmmm

According to the Orlando Weekly it is a cooked salad dish brought to Medinat Yisrael Reishit Tzmichat Ge'ulateinu by North African immigrants (Moroccan according to NYT).

I ended up making up my own recipe based on those I found online- pretty similar to RH's.

Sprayed saucepan with Pam (real authentic, I know), threw in half a diced onion, half a diced green pepper, a few crushed cloves of garlic, and a few sliced cloves of garlic. After that was soft, I added 4 diced tomatoes, a diced roasted red pepper, some salt and crushed red pepper. Brought to a boil, let simmer for a while.

It was wub.gif, but I'll probably play around with the recipe a little for next time.
