Toward the end of the perek, the Rambam discusses making images of human forms. While he distinguishes between embossed and engraved images, he does not distinguish between the image of the whole body v. the image of just a face. What does that mean for the outcome of this thread?

That the Halacha does not follow him, that the Halacha is as it is codified by both the Machaber and Ramah in Siman 141:7.

In my family we use Maria Theresa thalers, which have been in the family for a pretty long time, for our pidyon ha-bens, rather than Rambam thalers or Ben Ish Chai thalers.
