Assuming you have two beds, what sizes are they? If they're large, do you find it unnecessary and crowded? If they're small, do you want larger ones?
I'm in the process of moving (not just yet) and I'm looking to up our bed size from 48" to 54". But that will mean getting new sets of linen...
Is it worth it?

Definitely. Of course if you're not married a twin is perfectly fine.

We have 2 full size beds and we love it, We push 'em together and we get one huge jumping pad
In the states we also have two full size beds.....It really helps because DD still sleeps in bed with us.
For us its more important that the bedroom is large...so we made the dining room into our bedroom.

I disagree.
Having moved from rented apt to rented apt for the past 20 years, then finally buying a small apt, i could not imagine taking up so much of the bedroom with just beds. Besides the fact that the linens cost more to buy & store, take up more room in the washing machine, and you get less choice with them, I don't think that it should be such a focus.
I believe it's brought down in the name of the Alte Rebbe that ppl should have two twin size beds.
I know that a post menopausal friend asked the rov about getting just one big Queen sized bed and he said NO.

What occurs in the bed 'occasionally' is more taboo than what occurs in the shower regularly.
To go a step further, maybe you shouldn't let guests take showers at your house because then they are getting naked in a place that you've been naked.

This was my understanding also. This is to prevent one person feeling slighted and resenting the mitzvah. According to Chabad, the bed should also not be a temporary bed, like a sofa bed or a futon unless you're in a situation of dire need.
