Super chunky peanut butter for me. Though it actually depends on the context to some degree.

It must be mentioned that despite is "cliched" status, PB&J sandwiches are in fact quite delicious.

my BIL only buys organic everything, he also doesn't believe in flouride or immunizations to name a few,, and my kids won't touch the stuff when we are at their house.

I prefer chunky but since I feed it to my toddler (who doesn't have a peanut allergy, we know he doesn't have a peanut allergy, so random strangers can stop being horrified, ok?), I buy smooth.
I don't always go for organic but I do always get the natural stuff without the preservatives and sugar (and hopefully salt but I've been having difficulties with this recently). Ideally, it's just ground peanuts.
We don't have almond butter (because of allergies.)

I've heard (from a doctor) that even though a toddler may not have a peanut alergy, the consumption of peanuts or pb could increase the sensitivity to other allergies.

Doctors I've consulted say it's fine.
(I think this is one of those areas where doctors don't really know so everyone is basically guessing and trying to sound like they know what they're talking about.)
