I'm remembering something great I ate in Le Marais (check steakhouse etiquette). Has anyone ever made their own pate? Is it done with livers?? Because I hate liver, but I loved the pate. Google is not giving me anything.

There are many, many recipes. But ingredients aren't health-freak friendly ...

Pick up a copy of Julia Child http://www.amazon.com/Mastering-Art-French...9314&sr=8-1 at your local library. I have a feeling she has some pate recipes. There's a second edition also. Yes, pate is made with liver. And LOTS of goose fat. The issue is that you may have some trouble aquiring all of these ingredients from your regular kosher butcher. If you're in NY, just go to Le Marais, they sell it in bulk I believe.
