FYI
I am interested in making a yummy, crunchy w/ dressing salad for Shabbos. Any ideas, with stipulations below
1) It can not be taco salad (made that last week)
2) It can not require me to buy any chometz gamur ingredients (we're trying to rid our home of chomets, no increase)
3) It has to be yummy.
4) It doesn't have to be crunchy, but does need its own dressing. Crunchy is a PLUS though.

Anybody??

Purple cabbage salad with craisins, mandarin oranges and nuts:

1 bag of shredded purple cabbage
3-4 chopped scallions
1/3 cup pine nuts (or whatever suits your fancy)
3 carrots julienned (not grated)
1 can mandarin oranges, juice reserved
handful of craisins

Dressing:
4 Tbls brown sugar
1/2 tsp pepper
1/4 tsp salt
4 Tbs vinegar
1 Tbs juice from the mandarin oranges
1/2 cup oil (please use much, much less. it's not necessary to use the full amount)
1 tsp chicken soup mix (use less)
garlic powder (can be omitted)

Hmm.I think you've got a winner? But do I need to use cabbage, would it be bad to substitute it with regular lettuce?
If I do use cabbage, how do I check it? Can it be bought pre-washed with a hechsher?

Do you have croutons in the house? Sun dried tomatoes? (good extra, but can do without)

You probably could substitute lettuce, though I've never tried it. Maybe add some grilled chicken and pecans. I don't know how to check anything. I remember seeing pre-washed hechshered cabbage in the past.

Oh, I use pre-washed hechshered cabbage or something grown bug-free, but I buy it in Israel. I don't know what's going on with bugs and hechshering these days in the USA.

Sun dried tomatoes are dried tomatoes- like how you eat dried fruit

Sugar snap peas, cherry tomatoes, mushrooms, and a purple onion (if you like, I personally prefer not to eat raw onions). Dressing is a bit of oil, vinegar if you like (I don't), and some spices, I'd say garlic powder and a drop of salt and maybe some pepper, or really, whatever you prefer.

i heard that it's really not a big deal to check purple cabbage (unlike regular one)... but it is sold shredded with a heksher, at least here

Red cabbage: Detach loose leaves; discard. Core and split the cabbage outermost six leavesin half. Wash both sides of each leaf; wash in colander if shredded; noinspection necessary.

Cabbage (Green & Purple)
1. Clean the cabbage by removing all dirt and unclean layers, especially the
leaves that are not completely attached.
2. Cut the cabbage in quarters. Remove the bottom part of the cabbage (that
holds the leaves together). With your thumb, shuffle through the leaves on
the newly exposed area, making sure they are clean and free of bugs.
3. Separate all leaves and soak in water with Veggie Wash for 5 minutes. After 5
minutes, rub each leaf between your fingers. Empty basin by removing cabbage
with both hands (holding loosely) in small bunches and shaking them
under the water.
4. Rinse each leaf, on both sides, under a strong stream of water, opening all
folds. Put the leaves in a clean basin of fresh water.
5. Swish the leaves vigorously for 2 minutes. If foam forms on the surface,
repeat step 5 and 6 until there is no foam on the surface of the water.
6. Check three samples on both sides, against a light, [to make sure they are
clean].

If you have leftover challah you want to get rid of, you can make homemade croutons.
And you know about nuts adding crunch.

Coleslaw with Pecans and Spicy Dressing

You can use a bag of coleslaw mix, or whatever you would normally use to make a coleslaw
2 granny smith apples, thinly sliced
1 cup of pecans, toasted and chopped

Dressing:
2 teaspoons of dijon mustard
1 teaspoon sugar (Or more, depending how you like it)
1/2 teaspoon of cayenne
1/2 teaspoon ground cumin
3/4 cup of mayonnaise
1 lemon, juiced
Salt and pepper, as much as you like

It comes out yummy smile.gif
I made it last week when I had someone over for dinner and they liked it very much.

I have some leftover bread in freezer that I would like to use up before pesach, but am uncertain on how to make croutons and it's for guests so worried about the results.

yes, someone im'd that idea to me yesterday after I posted it. wink3.gif

I have an easy shmeasy recipe...it basically requires cutting it into cubes, mixing it with oil and spices, and baking till crunchy.

I think it was Spiffy and it looks good, but I want to serve the salad with the main meal (chicken, meat, etc.)

That's my point. Why the aversion to mayo as if that's what's going to give him a heart attack, chas ve-shalom, may he enjoy good health ad mei'ah ve-esrim.

I would but there are reasons at the current time why we don't. If it becomes as easily available to us as the full fat type we will take it.



(In answer to melech, mh just started realizing that he eats a bit too much red meat. He actually is working on cutting it down to size.)

really? you have regular mayo in stores but not low-fat? i don't mean to get personal, but you don't use hellmann's?

I'll echo what melech said - he has a problem with mayo, but not puff pastry dough which is full of fat (trans fat as well)?

At least mayo comes in low-fat versions which taste fine. Plus - it's not like he'd be eating the full 3/4 cup of mayo.

Personally, I don't think regular vs. low fat mayonaisse is going to make or break anyone. On the other hand, a diet that ignores the pros and cons of things like deli rolls I believe will indeed make a long term difference.

I never said that. I use whatever brand is available.

He makes his own pastry dough (no marg or oil in the recipe). So it's low-fat dough (he does put in eggs), no mayo, the issue is the deli

Yes, the nitrates are still an issue, although we do usually put about half turkeytype deli and half red meat type, does that make a diff?

(I don't think so either, but in his home his mother DID serve deli and DID not use mayo. It's perception, not reality, imo. Although as stated he is working on reducing his red meat consuption in general.)

off topic, but one of my kids had grapes after bentching last week so we pulled out the Halachos of Kzayis book to see if he needed to say a berachah acharonah [the answer is 5 medium grapes], and one of the kids piped up,
"so that's what unorganic food looks like"

low fat is not always available in the stores by you? (i'm not trying to be mean ro anything, ti's just that in my local non-jewish grocery store there are always both (and even no-fat, i think) are available, at the same price)

i used whole fat mayo once or twice. not for food, but for my hair. it was so shiny.

You could put a half a cup instead, or even less, but I suppose a bit more of the dijon and maybe if there's any other sort of ingredient that can be used as a substitute for mayo could work too... I don't know.

What I do know is that it's an amazingly delicious salad smile.gif

Ok, I decided that I like lyric's Terra chips idea the best and will probably splurge on a small bag. Any recipe for a TErra chips salad, nothing too crazy (and the avocadoes are very expensive and very hard so not buying them)

1) Lazy salad
Salad + terra sticks + cole slaw dressing from a bottle

2) oil dressing

2 cloves garlic
1/3 cup oil
1-2 TBSP sugar
1 tsp mustard
1/2 tsp soy sauce
1 TSP vineger
black peper


3)Kosher palette recipe
1/3 cup oil
1/3 cup red wine vinager
1/4 cup suger
3 TBSP ketchup
2 TBSP grated onion (a bit of a patchka)
