I find this an interesting question in light of 'who is a Jew', differing burial rituals and things that are antithetical to halacha.

I wonder how many people use or know about things like the OU Levaya program or other chevras that allow you to set up what you'd like before you face a tragedy, r"l.

OK, I'll bite. Tell us more about the OU Levaya Program and please provide a link for our convenience.

Some people used to belong to orgs from the town, city, conutry, region, 'fraternity' that they were part of, e.g. like these or these... most of these are pretty much defunct.
