The only way I like it is smothered in ketchup, mustard, onions, and whatever other cooked vegetables are around.

I know, but I was trying to think of a healthier alternative, if I would ever dare to make meatloaf.

Of course it's half and half. I meant as opposed to using potatoes, so I mentioned whatever cooked vegetables are around.

Why not? I just roll up meat/or turkey/or chicken with spices, breadcrumbs either an egg or two or none at all, with grated veggies or without stick in a pan and pop in the oven and it always comes out good.
