Tonight it was baked potatoes and scrambled eggs since I wasn't able to get the ingredients for the supper originally planned.

What are yours?

French toast is a good idea. Or just put together some quick salads with whatever you have in the fridge.
Also, it's super easy to just whip up a soup with whatever you have as long as you have some soup broth lying around.

Shnizel is quick to fry. Tuna melts...

bean burritos. so i always try to have whole wheat tortillas, a can of refried beans, and some combination of salsa, sour cream and cheese.
they're good for using up cooked vegetables too.

I know, but if I foget to defrost it in advance I can do it in the microwave. Hamburgers are also pretty qucik if I manage to defrost the meat enough to pull it apart -pour in spices and dump in the foreman.

yup!!!! Same here, except now that we're clearing out chometz, we're out of tortillas.

In order to defrost chickens, run under warm water for a few minutes.
Tuna melts are yummy or make pizza melts, put some pizza sauce on the pita, and sprinkle some cheese (or if you don't have shredded put slices/pieces on). Or veggie melts with some veggies, cheese.

Instead of pizza sauce on the pizza pitas you can also try using matbucha, it's really good.

sounds yum (matbucha is eggplant stuff right)!!! I need to suggest this to mh, but with kids, I wouldn't go for it as they don't like thinks that variate from boring and standard, in my experience.

-chopped onion/mushrooms fried, add tin chopped tomatoes and quorn(soya pieces), option to add cheese at the end.

-spaghetti

-stir fry, and throw in some sausages at the end

-onion potatoes salami all chopped small and fried over (similar to above)

Necessity is the mother of invention - it's amazing what can land up on the table given only very little time to prepare!!

Depends if it's for kids or adults.

Kids: frozen vegetarian shnitzels and frozen baby latkes. Or real sausages and frozen fries; I always keep these in the freezer. Or
pasta and cheese and ketchup.

Adults: Soup: takes half an hour to cook some veg and puree it. Fresh bread, croutons and cheese to serve.
I always have a pack of "Of Tov" grilled chicken in my freezer. It's absolutely delicious and all you have to do is heat it up and serve it with a salad and rice.

- Pasta with sauce of sauteed garlic and olive oil and any veggies in freezer or leftover (we do peas and broccoli alot because I always have Bodek broccoli, otherwise the veggie washing and checking could add to potchke of the dish)
- Baked potato bar
- Stirfry with frozen veggies and packaged sauce and steamed rice (with pepper steak if I have it)
- taco salad with fresh veggies and black beans with ranch dressing (yuuuuummmm)

I think it comes down to having a well stocked pantry and freezer so that you have things to go off of when you don't have much time. Since I work full time, I never really have a ton of time to make huge dinners during the week and I only usually have time to go grocery shopping on Sundays I try to make sure I always have frozen and canned staples so I can whip things up quickly. We also tend not to eat meat during the week so that is often quicker (and cheaper).
